{"id":40,"date":"2016-01-15T00:54:17","date_gmt":"2016-01-15T00:54:17","guid":{"rendered":"https:\/\/crossett.net\/thecountrywife\/?p=40"},"modified":"2016-03-02T00:25:52","modified_gmt":"2016-03-02T05:25:52","slug":"pancakes-with-only-two-ingredients","status":"publish","type":"post","link":"https:\/\/crossett.net\/thecountrywife\/index.php\/2016\/01\/15\/pancakes-with-only-two-ingredients\/","title":{"rendered":"Pancakes with Only Two Ingredients!"},"content":{"rendered":"<p>Recently there have been multiple recipes for 2-ingredient whatevers.\u00a0 I am a sucker for them.\u00a0 Most of them are truly nasty BUT these pancakes are a different story.\u00a0 I made one batch for my husband with some trepidation.\u00a0 He came back to the kitchen with plate in hand and asked for more!\u00a0 Thank goodness I had more ingredients!<br \/>\n<!--more--><\/p>\n<p>This is the recipe:<\/p>\n<p>1 large ripe banana<\/p>\n<p>2 eggs<\/p>\n<p>1\/8 teaspoon baking powder&#8211;optional but I used it<\/p>\n<p>1\/8 teaspoon cinnamon&#8211;also optional but I like cinnamon, so&#8230;<\/p>\n<p>While preparing the batter have a large cast iron or other heavy skillet heating on the stove over medium heat. In a good-sized bowl mash the banana until it is completely mushed up with no lumps at all.\u00a0 You will find that really ripe bananas work best.\u00a0 Add the eggs, baking powder and cinnamon and whip with a fork until everything is well combined.\u00a0 You don\u2019t want globs of baking powder or cinnamon visible.<\/p>\n<p>Spray the skillet with cooking spray or put in a pat of butter to melt. With a 2-Tablespoon portion scoop, pick up one scoop of the batter and put it in the pan.\u00a0 You should be able to get about 3 3-inch pancakes in the pan at one time.\u00a0 Let them cook until the bottom is lightly browned and the surface of the pancake looks puffy and somewhat dry.\u00a0 Using a pancake turner carefully turn the pancakes over and let them cook another minute or so.
