{"id":158,"date":"2016-04-11T08:00:08","date_gmt":"2016-04-11T12:00:08","guid":{"rendered":"https:\/\/crossett.net\/thecountrywife\/?p=158"},"modified":"2016-04-10T21:14:54","modified_gmt":"2016-04-11T01:14:54","slug":"peanut-butter-chocolate-no-bake-cookies","status":"publish","type":"post","link":"https:\/\/crossett.net\/thecountrywife\/index.php\/2016\/04\/11\/peanut-butter-chocolate-no-bake-cookies\/","title":{"rendered":"Peanut Butter Chocolate No Bake Cookies"},"content":{"rendered":"<figure id=\"attachment_159\" aria-describedby=\"caption-attachment-159\" style=\"width: 300px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-159\" src=\"https:\/\/crossett.net\/thecountrywife\/wp-content\/uploads\/2016\/04\/Peanut-Butter-Chocolate-No-Bake-Cookies-4Web-300x200.jpg\" alt=\"Peanut Butter Chocolate No Bake Cookies\" width=\"300\" height=\"200\" srcset=\"https:\/\/crossett.net\/thecountrywife\/wp-content\/uploads\/2016\/04\/Peanut-Butter-Chocolate-No-Bake-Cookies-4Web-300x200.jpg 300w, https:\/\/crossett.net\/thecountrywife\/wp-content\/uploads\/2016\/04\/Peanut-Butter-Chocolate-No-Bake-Cookies-4Web-768x512.jpg 768w, https:\/\/crossett.net\/thecountrywife\/wp-content\/uploads\/2016\/04\/Peanut-Butter-Chocolate-No-Bake-Cookies-4Web-1024x683.jpg 1024w, https:\/\/crossett.net\/thecountrywife\/wp-content\/uploads\/2016\/04\/Peanut-Butter-Chocolate-No-Bake-Cookies-4Web.jpg 1086w\" sizes=\"auto, (max-width: 300px) 85vw, 300px\" \/><figcaption id=\"caption-attachment-159\" class=\"wp-caption-text\">Peanut Butter Chocolate No Bake Cookies<\/figcaption><\/figure>\n<p>Tonight I decided to make some no bake cookies.\u00a0 When I was a child my mother made these cookies, calling them Chocolate Oatmeal Cookies.\u00a0 Since I am making them for the Seminary students who meet in our home at 6 AM on weekdays, I am thinking these cookies are sort of like cereal&#8230;aren&#8217;t they?!<\/p>\n<p>These are the ingredients:<\/p>\n<div>2 cups sugar<br \/>\n1\/2 cup milk<br \/>\n1 stick (8 tablespoons) unsalted butter<br \/>\n1\/3 cup unsweetened cocoa powder<br \/>\n3 cups old-fashioned rolled oats<br \/>\n1 cup smooth or crunchy peanut butter<br \/>\n1 tablespoon pure vanilla extract if you remember<br \/>\nLarge pinch kosher salt\u00a0 if you remember<\/div>\n<div><\/div>\n<div>This is how I made them:<\/div>\n<div>Place a longish length of waxed paper on a clean counter.\u00a0 I had just washed the counter so it was somewhat damp.\u00a0 The paper stuck to it beautifully.\u00a0 If you don&#8217;t have a counter handy, you can put the waxed paper, or parchment paper, on a cookie sheet.<\/div>\n<div>Put the oatmeal in a large bowl.\u00a0 Plop in the peanut butter on top of the oatmeal.<\/div>\n<div>Using a medium-sized saucepan, bring the sugar, milk, butter and cocoa to a boil over medium heat, stirring occasionally.\u00a0 When the sugar mixture begins a full rolling boil, let boil for 1 minute by the clock. Remove from the heat.Immediately pour the hot sugar mixture over the oatmeal and peanut butter as well as the vanilla and salt if you remembered.\u00a0 Stir well with a long handled wooden spoon until well-combined.<\/p>\n<p>Using a portion scoop, scoop out the mixture and place it onto the waxed paper on the counter or baking sheet.\u00a0 Let sit at room temperature until cooled and hardened. This takes about 30 minutes. Refrigerate in an airtight container for up to 3 days.<\/p>\n<\/div>\n<div>Because I used a two-tablespoon portion scoop, this batch made about 24 cookies, but it is hard to know since someone came by and helped himself before I counted&#8230;!\u00a0 These are not his first choice in cookie.\u00a0 He feels peanut butter belongs on bread with jam.
